I know a Filipino lady that makes lumpia a lot. So I gave her some elk burger and she made up some elk lumpia with it......awesome stuff. This is why I grind most of my elk.......so much easier to use it in different dishes.

You willing to share your recipe for the Cajun dipping sauce?

Equal parts ketchup and Mayonnaise...about 2 tablespoons each. A dash of Tabasco and a dash of Cajun Power.

For this recipe I browned a lb of venison. Drain and let cool. And a cup of cheddar cheese to the meat and mix well. Spice it up with a healthy amount of sea salt and cracked black pepper. Place the mixture in egg roll wrappers and fry until golden brown.
