Edge binding question

Say like inside my Kifaru pack. Is it just for looks? To make it look professional? Or could you get away with just zig zag stitching the edge?

It gives it a finished look, reinforces the seam, and add some water resistance. It definitely is not necessary. No need to zig zag either.

Really just keeps fraying to a minimum, but doesn't add much of anything else.

Finished look, fraying protection, and as noted its a second stitching line (with a backing material) just slightly inset from the original so it adds a backup seam if the first one gets stretched badly.
