This is a great recipe and was really easy. I made two batches using feral pig meat. You do not need to add any fat, making this a great recipe for any lean cut. The final product is kind of a cross between salami and summer sausage. This is a fast cured and smoked sausage that will last a decent amount of time in the field. Enjoy.
