This is a great recipe and was really easy. I made two batches using feral pig meat. You do not need to add any fat, making this a great recipe for any lean cut. The final product is kind of a cross between salami and summer sausage. This is a fast cured and smoked sausage that will last a decent amount of time in the field. Enjoy.

I used Michael Ruhlman's recipe in Charcuterie and it has never disappointed. In fact, it is my favorite sausage we make and disappears the fastest. It is the perfect field lunch and is excellent when accompanied with some good mustard or cheese.

I plan on getting that cookbook this year as well as upgrading from my wife's kitchen aide as my grinder/stuffer. I am hooked on the entire process.
