For those who save deer or elk livers/hearts here is a tasty and simple recipe. It is especially good for feeding someone who is skeptical of wild game organ meats. A variety of meats can be used. I used elk liver (6oz) and elk burger (1.5 Lb ). I made a double batch with plans to eat leftovers when my wife leaves to visit one of our daughters. Well, two other daughters and their husbands almost finished it off in one sitting.
If you haven't tried elk liver it is much milder than any beef or chicken liver. I also like it cooked with bacon and onions (Rinella recipe).
Elk livers are big so you get a lot of meat to experiment with. Even the trim can be cooked for healthy dog treats.
