How long wo salt or freezer

My son and I will be goat hunting in a couple weeks. If successful, i plan to bring the head back for a European and possibly the cape for a simple back of the couch tanned throw.
HOWEVER, if we are blessed enuf to find a legit trophy I would like to do a 3/4 mount. ...if I can come up with the scratch.
So my question is....how long can the I leave the cape attached to the head before freezing?
If I were to skin out the head, is it a must to turn out the ears, lips, split nose asap? I've never done this b4 and am a little intimidated.
Ideally there would only be about 48 hours between when the animal is shot and I'm home.

48 hours, if kept cool, clean, dry and mostly in shade I'd say you'll be just fine leaving the head inside the hide. If you are to skin it out, you don't have to salt it and in fact I wouldn't recommend it unless you are able to flesh it really well prior to salting. Salting it before fleshing it well will only make the taxidermist upset when you drop it off.
