Looks amazing. I've been utilizing a crap ton of green chili on my breakfasts of all types recently. This would be a prime candidate!
 
What it's all about! We eat about 30 lbs of green chili a year (often in burritos)... an addiction I took up living in southern NM half my life. Elk is top of the list in our kitchen too!

I need to make our dishes with the "trimmin's" like you have here-- NY Times presentation level there man!!!
 
If you have any roasts especially shoulder roasts try this for taco or burrito meat.

We use this barbacoa recipe one a month in our house. It’s excellent, ate half of my Coues last year with this recipe.
 
This barbacoa recipe is what I do with most venison neck roasts. That with fresh salsa makes great tacos. I freeze the left overs in vac sealed bags and have easy tacos anytime.
 
Elk roast in a dutch oven with chilles in adobo sauce is great on tacos and burritos as well. Good looking plate of food!
