Packed out a bull caribou with Goshawk.
5 miles from killsite to boat. 2 trips with meat + daygear. ~100lbs each time.
Kept the meat (bone in) in the bag. Pack performed really well, but didn't reverse gravity or remove rocks.
I'm very happy with my Goshawk 4800 (+Lid, basetalon and hipbelt pockets).
Zipper makes it less water resistant, but more accessible than the Fortress bags. Only you can decide what is more important for your needs.

I'm very happy with my Seek Outside Goshawk (4800 cu. in.). Big enough for 5-7 days, more if you are willing to strap stuff to the outside. Yet it shrinks down to a really nice daypack. Very lightweight compared to the competition. They have several other bag options I think will fit your needs...
