    Anyone here make pemmican?

I just realized that my answer above told you how to do it ground meat; I meant to include that bison should be AWESOME. The green chili rub goes well on red meat, I was disappointed with it on chicken. The Red Chili Rub on chicken thighs is fantastic. pat

    Anyone here make pemmican?

Thanks for the interest, but my papers were written a real long time ago when I was in school, thinking I wanted to be a chef with my life. The computer that I kept them on had a drive failure, and they were not recoverable. Most of the people in cooking school with me were young kids who...

    Anyone here make pemmican?

I don't have a grinder, so I look for thin cut steaks, "beef for stir fry", "beef for tacos", or "thin cut for milenesa". Any place that cuts meat on site can take a roast and slice it into thin pieces. Ground meat is much easier, though. pat

    Anyone here make pemmican?

Believe it or not the easiest way to do that is with a jerky gun. If you don't wish to do that you can do this: Mini Man Burgers Recipe : Alton Brown : Food Network At about 2:04 is the part you are looking for. Once you season it, don't fold the meat over, instead score it with a pizza...

    Anyone here make pemmican?

If I don't have enough in house made jerky I go to the local grocery store, and look for roasts/steaks labeled "discount: buy this before we give it to an animal". Season to taste and dry. I like this seasoning: AlbuKirky Seasonings Green Chile Rub Season and dry to a woody state: Really...

    Anyone here make pemmican?

What is old is new again. We hashed this out a bit a few years ago. I love my pemmican formula so far: Sawdust shredded jerky by weight, an equal weight of dried cherries/blueberries, and an equal weight of clean rendered grass fed tallow/suet. mini muffin tin for portioning 2 oz servings...

    Thoughts on Cheyenne Wy?

Wife is from there. I hate Cheyenne, but love the state. We spend some time there every couple of years. To be fair, there is a huge AF Base, and it is a small town. Flat, windy, cold. Antelope in the front yard at different times of the day. We live in my home state, and she would move back...

    Oatmeal

For those of you loving steel cut, you may want to experiment at home and try soaking your oats in the water (cold) overnight, and then bring it to a boil in the morning. Some grains this works for. Another dirty trick a friend taught me was cook grains 80% of the way, and then chill them. It...

    Condiments in the Deep

I found sriracha packets at work in the condiment drawer, not sure where they came from. Also Panda Express Hot Chinese Mustard, which tastes like it also has sesame oil in it. For not packing out trash...

    Best source for dehydrated meat????

For noodles/soups I make a vegetable soup base and beef jerky, dry them thoroughly, and toss them in a coffee grinder or blender. I have gotten through several days of hunting by mixing a table spoon of each into a pint of boiling water 3-5 times a day. I really don't like the flavor of that...

    Solid Broadheads Anyone use them?

For years my dad and uncles insisted on MA-3s. I loved these broadheads. They were incredibly easy to sharpen, got real sharp, and presented a cutting edge to the target from the start. The main competition at the time were Muzzies. The uncle and dad didn't like the transition from the...

    Finger Compounds

I just had a vintage Bear Silverback made ready for season. Whiskerbiscuit. I shot it extensively for six months, finger release. 65# draw @ 32 inches. No problems. A friend gave me a release, telling me it would improve my accuracy. I have not noted a change in accuracy, but once my...

Best way to cut weight poll

My gear is constantly evolving...I agree with an All Of The Above approach. I have been sidelined for the last 14 weeks with a bum shoulder. Weight crept up. While body composition is the first thing that comes to mind, it is the last thing I will spend money on. I have a gym membership, and...

Is applying in New Mexico worthless?

Heck, even as a lifelong resident putting in for resident only tags as well as general tags, archery, muzzleloader and rifle, I haven't seen a tag in the last six years. I still have hope, but it is really depressing to draw a mule deer tag in an area where the elk are pushing out the deer. In...

    My marriage is falling apart

Second chances are hard to come by... Priorities! Glad to hear things are going well. You faith and family are treasures and need to be treated as such. I once attended a Marriage Enrichment sort of seminar put on by the Dept Chaplain. My wife and I still crack each other up, 17 years later...
