Darn good. I used some beef broth, salt, pepper, minced garlic, onions, carrots and celery in both. Tossed in some rosemary and a few bay leaves and let them go.

Gotcha. I like a place local to me in western Washington called the Bear’s Den. But I’m not sure how feasible or worthwhile getting a pelt to him is.

Do you brine before smoking or just dry rub then go low and slow?
I tried brining like a ham and think I left it in the brine too long. It was way too salty. I’m defrosting another roast now and really don’t want to mess this one up!

I got to see one of these last week, it was pretty neat.
One of the guy out attachments points had a minor failure. I’m not sure what the story was but the owner was still pleased with it.

I just got back from a week in the backcountry using a two man tent solo and am shopping for a 4 man tipi right now for this very application.
The ability to use a stove someday is a plus. I don’t have immediate plans to do so, but the option is a bonus.
