If I'm shooting Barnes or Cutting Edge, I never get closer than .050", finding that shorter is usually better with the monos.
If using Accubonds, another favorite, I start at .010". I never get closer to the lands for hunting.
I shoot pulled bullets all the time (pulled with a RCBS collet puller). I've never seen any discernible difference between the pulled bullets and the "new" ones. I've never destroyed a bullet by pulling it apart, either, during the profess.

My GF took a nice water buffalo with my 9.3x62 and a 286 grain Barnes at about 2500 fps. It performed perfectly and was found under the hide on the far side of the animal.

Consistency is more important than the exact number. Don't forget that freshly annealed brass is softer, too. Also consider how much "tension" is created by factory crimps.
As others have said, it is all about fit, followed by confidence. The 7mm-08 is a great caliber for almost anything you'll ever encounter, minus the big bears and other dangerous game.
