I always carry a few pairs of nitrile gloves in my pack and use them regularly for field dressing. Makes clean-up easier. Almost always end up tearing them, though.
I would never put my sidearm on the pack, it‘s on me, nowhere else. I run the Marsupial harness with the holster attached to the bottom of the harness. Works great for me!
My go-to is an MSR Reactor, but just to add something more "exotic": did you consider a liquid fuel stove like the MSR Whisperlite? I love the idea that these things run on pretty much anything. I've got 6 ft of a small diameter hose wrapped up with my Primus Omnifuel so that I can help myself...
Can't praise my Hilleberg Niak enough, absolutely love it. It's not cheap, but rock solid and if not the most light-weight option, still pretty packable.
I've got the 553 and absolutely love it. Packable, light, goes everywhere. On the other hand, if I already had the 883 I guess I would just stick with it. Not sure if you wouldn't miss the 883 when looking through her little sister...
I've got a pair of Meopta MeoPro 10x42 HD and am really happy with them. Those should be roughly in the same price range (don't now how much they are, now). I guess they are comparable to the Nikon M7.
I've got the magnetic bino pouch and the magnetic RF pouch. Since it in fact does interfere with my compass etc. I only use it in situations where landnav is not necessary, which is 99 % of my hunting situations, tbh. For that, this setup is just great, I love it. Except for the compass issues...
I've got the magnetic bino harness with magnetic RF pouch and it definitely throws my compass of by quite a margin. Definitely not using this setup anymore as soon as landnav could become necessary.

Can't say anything about how it performs on bears but it is definitely the scope I don't mind packing on any hunt. I mean, it's tiny, lightweight, optical quality is great. Never missed a 65 since I own the Kowa 553.
