ANTELOPE BREAKFAST SAUSAGE

2 ½ LBS GROUND VENISON
1 ½ LBS GROUND BACON ENDS
2 TSP COARSE BLACK PEPPER
1 TBSP MEAT TENDERISER
1 TBSP + 1 ½ TSP SAGE
1 TBSP DRIED ONION
1 TSP GARLIC POWDER
1 TSP GARLIC SALT
½ TSP CAYENNE PEPPER
1 TSP CRUSHED RED PEPPER

Kind of a mix of sausage and bacon in one sausage patty. Tried the bacon ends instead because I ran out of other pork trim, whole family agreed it tasted better. I must say it is the best sausage I have made. Bacon makes everything better.
