Wanted to share some of my favorite ways I have prepared/eaten my pronghorn.
1. Cast iron antelope steaks on fried potatoes with chimichurri.
2. Sliced antelope steak sandwiches on toasted ciabatta with goat cheese and roasted red pepper spread.
3. Braised antelope shanks in white wine, garlic, and rosemary on mashed potatoes.
