Though commonly referred to as “the void”, I think more times than not, it’s probably the backstrap by the looks of that pic.

To address one of the other questions about ethics... I am doing everything I can to recover an animal I shoot within a reasonable timeframe for the meat to still be good. After that time has passed, I am back to hunting any other legal animal. In Colorado it is a carcass tag and not an I shot at tag, I wounded one tag, or man I am sure he is dead somewhere tag.
