Any butcher tips for in the field or certain cuts that are a must save (as opposed to putting it towards sausage)?

I have only killed one bear, but it turned out great. The main thing I learned before going on the hunt was not to treat it like deer or elk. You do not want the meat to age if possible. Get the majority of the fat trimmed off and into the freezer. Reasoning is the fat is what causes all the bad tasting meat. Unlike deer or elk where the fat improves the taste and tenderness of the meat. Take it for what it's worth...
