Got a couple bears down and I intend to make some snack sticks and summer sausage. Every recipe I see notes to include pork at a 20-30 percent ratio. I generally would do that with deer but I thought since the bears have such desirable fat I could use that to get a higher fat mixture.
Should I just render the fat separately and use a pork/bear blend in my summer sausage? I'll likely try a small batch and see but thought I'd reach out to anyone with experience.
