Black Bear Snacksticks/summer sausage

Got a couple bears down and I intend to make some snack sticks and summer sausage. Every recipe I see notes to include pork at a 20-30 percent ratio. I generally would do that with deer but I thought since the bears have such desirable fat I could use that to get a higher fat mixture.

Should I just render the fat separately and use a pork/bear blend in my summer sausage? I'll likely try a small batch and see but thought I'd reach out to anyone with experience.

I'd render the fat separate. My experience is that bear fat renders at lower temps than pork fat so the bear fat renders when smoking making a nasty slimy mealy mess. I've also had poor results keeping non-rendered bear fat for any length of time
