Bologna Recipe

I’d like to make bologna without MSG. Forever I’ve been making bologna from kits but they all have MSG. Anyone have a proven and delicious recipe for a bologna spice mix without MSG?

Same with hot sticks, Kielbasa, or whether else you’re liking to share.

This is what I do with a 25lb kit.

20lb meat
5lb bacon
18oz organic maple syrup
16oz water
1 pack Con Yeager Pa deer bologna mix
2/3 jar chipotle pepper
1/4 jar dried jalapeño
2.5oz garlic powder
2oz black pepper

there is about every sausage recipe you can want in there. just skip msg if you want.

My new favorite is from Thompsons Meats in Jersey Shore. One of my biggest complaints about premixed seasonings is how salty they are and Thompsons is not as well as having a great flavor. I'd highly recommend you try it and this is coming from someone who likes the Con Yeager PA mix.
