I am a complete novice when it comes to photography/videography, looking to get a camera that will do both for capturing pictures and videos for hunts out west, any recommendations on a good camera to start with? I would like to buy used and keep it under $800 if possible

How about buy new and get a great camera?
One of the best deals out there is the new Olympus E-M10 Mark 3. It has 4 k video, 5 axis image stabilization built into the body, is fast and compact. Like everything else coming outr recently, it's mirrorless so the focus will be quicker and better, especially in video.
The camera comes with 2 lenses a 14-42 (Wide and short telephoto) and a 40-150mm, great for wildlife at far distances as it is equal to 80-300 in 35mm terms.
Normally this kit is $999.99. Now thru 1/4/19 we can do this for $649.99 and include an Olympus case, 16 gig card, 2 Digital UV filters (1 for each lens), a 32 gig Rugged card and a cleaning kit.

Another good option is the Canon M50 2 lens kit. It comes with similar strength lenses and also has 4 k video. This is normally $1149.99 and is on special now for $829.99. We will throw in a case and 32 gig rugged card as Canon does not supply either.
The Olympus has built in 5 axis Image stabilization, canon has image stabilization, not 5 axis, in some of their lenses, making the\ Olympus a MUCH better option

Both are new with 1 year USA warranties

Give me a call at 516-217-1000 if I can answer any questions for you

Dang. That E-M10 Mark 3 sounds like a great deal. I think I'm still in the browsing phase of camera shopping. I think it's amazing that you guys party advice and deals so frequently.

If you want small, light and a freaking powerhouse....look at the Sony rx100 line. I have the rx100m4 and I will never haul a full sized rig on a hunt again. I can save #10 of weight and get 90% of the performance.

While I agree with you about the great quality of the RX100 vs other point and shoot cameras, the interchangeable lens cameras, at worst, have a sensor, almost 13x larger, resulting in MUCH better images if you print them larger then 8x10 or shoot videos you plan to show on a large TV set
