I like to open it up along the Chambers. Clean it up really well it will create three steaks with two being bigger and one being smaller. I like to get a piping hot pan with butter and garlic going. As the meat cooks for a few minutes on each I tilt it so the butter and garlic pool to the low side. Then I take a spoon and spoon it over the meat. Once each side is seared I'll put it in the oven with more butter on top of it at 350 for like 10 minutes or until desired doneness.
