Interesting, you just grill the belly’s on the salmon like that? I’ve never seen or heard that, may have to give it a try.

Yes. They are the best part of a king salmon when fresh. I don’t care for them at all after they’re frozen so I trim them off. Also excellent when brined and smoked.

I like to skin the fillets before I vacuum pack and freeze too. Love the fat fresh but to me it’s nasty after it sits in the freezer. My opinion only, I’ve got friends who strongly disagree with my process

Not trying to be a dick, 😁, but why? Are they that good, or did you just want to try em? I just dont think I could get myself to eat testicles from any animal.
At first I just wanted to try them. But after that I’ll eat them off every deer I shoot. They were super good.

Makes sense. I’m definitely gonna give that a try. I’ve taken to skinning them all before they go on the grill. Much better flavor I feel. Learn something every day!

I had one of my few wild game failures tonight. I had saved the kidneys of my cow last year. I gave them a good soak and had a reputable recipe but damn they are just wayyyyy too pungent. I could have forced them down if I had too but I think my sweat would have smelled like elk for a few days.

I hate when things go wrong with game or cooking in general. Just always sad to waste food. I enjoyed the heart, liver, tongue etc from this cow so most of the offal went to use. Going to take a bit of work to get me back on board with kidneys though.
