Looks delicious! Ducks get picked on far too often. Don't get me wrong, I don't start drooling when I hear it's time for duck dinner, but they're always better than you think they're going to be.

The key to tasty waterfowl is not to cook it any further than the OP did right there. Nicely done.

Rare to med rare on duck. Any more than that, you'll be eating liver flavored boot leather.

Wonderfully done! I've found that a good soak in a brine to pull some of the blood out really helps too!

This thread inspired me to slow cook a pile of squirrels my kids and I shot last year. I hadn't had then in years. They were unexpectedly very good. My wife even tried them.
