Healthy eating in the field?

Yes, I am middle aged. Some good info here. It’s just hard for me to completely eat healthy since we are limited budget wise and raising picky eaters. Seems like we have to prepare 3 separate meals every night. Lol

Just coming out of a heart issue and eating healthy and maintaining a healthy blood sugar level is stressed for my recovery.
So Cup of noodles, Spam, all the good quick stuff is out, at the moment I have some trail mixes and Jerky, can't stand oat meal, cream of wheat or grits, so i guess it toast and coffee for breakfast and a nice stake at camp for dinner but what about the rest of the day and days out in the field ?
Anyone have pointers for me ?
Next mile meals backpacking have clean, healthy ingredients and are low carb. If you’re not a low carb guy a pack of tortillas to fill with the meals will fix that right up. Great taste and decent options.

Its a good thing I will only be 4 days
so this is what is on my menu
3 rib eyes
shrimp
lean sandwich Ham
Bimbo bread (Very good healthy bread 70 cal a slice)
materella sandwich cheese
egg whites
Canned Mushrooms
Canned potatoes
Brown rice
celery
pears apples tangerines
tea coffee decaf
Vitamin waters
a couple beers
this should feed me for four days
