Homemade venison kilbasa

I tried making venison kilbasa and it was a huge success. I had 12 lbs (7 venison 5 pork fat) that I seasoned in December and froze till the weather got colder. Filled 12 rings yesterday and smoked them today. 6 hours at 150-165. The last 30 I cranked it up to 195, internal temp got stuck at 140. My kids loved it. I had 1 2/3 lbs left in the grinder that wouldn't run trough so I made patties for lunch yesterday.

Yes to both. I got a spice kit and dried hog casings for Christmas a few years back and finally took the time to use it. I had my father's big power grinder in December so I ground up half a big doe and some other frozen meat I had saved for sausage. I had never used dried natural casings before but they were super easy

Yesterday I shared some with my brother in law doesn't eat much game meat and he kept saying I can't believe this is venison.
Thanks man, I have a 25 pound batch of summer sausage curing right now with Leggs mix, I had some made with my elk from the butcher and it was incredible I reached out to the butcher and he sold me a few packs of some that was made by Leggs specifically for him. I did a trial run of some bison summer with the Papa Greco mix and I can’t believe I made it, it’s the best I’ve ever had.

If you just want a DIY spice list for Kielbasa:
Kielbasa:
5lb meat (we tend to use 80/20 game/fat blend, its on the leaner side you can go without it being dry, 30-35% fat is more common)
40g kosher salt
72g minced garlic
3g ground marjoram
10g black pepper
1/2c ice water

Just started getting into processing our own venison last year, now we're addicted and the pressure is on to get more deer on the ground this year!
