Always bone out unless you can drive to it. There's zero cons. Then when you get home it's all ready to trim and wrap. No point in packing bones.

somewhat a newbie to the western game (3 years) i do however help a buddy whose a butcher so work up 40-60 deer a year. saying that our group of 3 has taken 5 elk in those 3 trips all made it to the truck boned out. probably takes another 20-30 minutes at the kill site but we’ll worth it in my eyes. eventually you have to bone them anyway why carry the weight?

having said that i can see the benefits of leaving the quarters boned in in certain situations.

btw 3 healthy guys can carry out a boned out elk in 1 trip without too much struggle

I've been meaning to try it but then my dogs give me that look when I'm processing and I always cave.

I drink bone broth daily but I've never made my own.
