I made these last night and decided to share as they turned out fantastic. Definitely one of the best things I've made with wild-game burger and will be making them again - and probably often. Prep time was all of about 10 minutes and super easy.
1lb of venison burger - I grind mine with 20% bacon ends and pieces but you could chop some up and add. I divided into 10 equal size balls - you could vary this.
Put those balls into a lightly sprayed muffin pan and squash with a shot glass to form an impression.
Put a slice of cream cheese in the depression (I used about a butter square size)
Shredded cheddar on top - enough to cover
Topped with diced jalapeno - I used 1 large pepper and that was about right for us
Lightly salt and pepper
Baked 15 minutes at 400.
Added bread crumbs and baked another 5 minutes
We ate them just like this but you could throw them on slider buns if you wanted to.
