My wife and I have vibes. She has the maverick which is a paddle board/kayak hybrid. We both really like it and it would give your girlfriend a best of both worlds option. I don't believe they make that model any longer but a used one or similar hybrid boat could be a viable option for you.

If you're on small water (not sure how big the Yellowstone river is) rivers, lakes and ponds, tracking isn't such a big deal, but maneuverability is. I fished small rivers, lakes and ponds for several years in an 8' Sundolphin Aruba. It was easy to transport, light weight, and had a 285 lb capacity, was stable and best of all it was easy to customize. I added rod holders and fold out tackle storage. On big lakes it was tiresome because it didn't track well, but that's an issue with most small kayaks. There are also options to improve tracking on small kayaks, like adding a skeg. I bought it new on sale for 150.00, with a paddle about 10 years ago.
