just stuffed a nilgai tenderloin with sauted onions/jalepenos and creamcheese. then wrapped the whole thing in bacon before chunking on the pit. to die for!

Got a recipe? That sounds legit.

man pretty simple, i made two slices in the tenderloin (long ways), could be for any game animal (elk, muley, oryx, etc). we sauted the an onion and two jalepenos in a pan. once cooked down, we stuff the veggies and cream cheese into the two slices. then came the bacon wrap folowed by wrapping the whole bundle in foil. next stop was the bbq pit for about 20 minutes.
