Meat Eater Recipe

Figured I would share this. First time using this method for me and I took the recipe from the Meat Eater website.
Sous Vide the roast for 13 hours @ 130. I thought it turned out great. Next time there a few things I would do differently but overall its a great way to cook. Used a 3 lb elk shoulder roast.

13 hours didn't turn the roast a bit mealy? I've found that happens when cooking with sous vide too long but I suppose it depends on the cut.

Very first time ive used this method, nothing to compare it to for me. I thought it held its moisture and texture very well through that amount of time. Might have held it better due to searing it before the sous vide
