New dish tonight- Grilled Serrano Citrus Elk Tacos!!

I don't usually even read the recipe sections, but I tried a new concoction tonight for dinner and thought it was worth sharing. I call it "Grilled Serrano Citrus Elk Tacos"

The ingredients:

1 Elk loin roast (halved lengthwise)
1 Fresh pineapple (cubed)
1 mango (cubed)
1 serrano
1 medium red onion
1 head garlic
1 tbsp chili powder
Splash of lime juice
Favorite seasonings for elk steaks

Preheat grill. Then I rolled the elk loin halves in my favorite seasoning mix (garlic, onion, paprika, etc). Mix mango and pineapple cubes in bowl and sprinkle with chili powder and lime juice. Slice onion, Serrano, and garlic cloves and place in grilling basket. Sear the elk loins on all sides (leave fairly rare) then remove and wrap in foil to rest. Put grill basket with peppers onions and garlic on until onions are just about cooked stirring occasionally. Slice the elk loin into 1/4" strips and add to grill basket along with the mangos and pineapple mixture. Turn heat down to medium and cook until elk finishes to your desire. I heated up some corn tortillas on the top rack as it was finishing and severed with a sprinkle of cheese. The dish turned out fantastic, and a bit on the spicy side.
