I've made these omelets in camp many times........ simple cleanup and very little work.

Ingredients
2 large eggs
Ham, chopped or pre cooked breakfast sausage
Shredded Cheddar Finely chopped onion
Bell pepper, chopped
Mushrooms chopped
Salt & ground black pepper

Directions
- Bring a large pot of water to a boil.
- Crack two eggs into a quart size resealable freezer bag, then press out as much air as you can and seal the bag shut. Squeeze the eggs to beat them. Re-open the bag and add the ham, cheese, onion, bell pepper, mushrooms and season with salt and pepper.
- Carefully place bags in the boiling water, and cook until the mixture is set, about 8 minutes.
- Use tongs to remove the bags from the pot. Carefully open each bag and roll out the omelet onto a plate.
