No Mess Omelet in a Bag

I've made these omelets in camp many times........ simple cleanup and very little work.

******** I actually enjoy wrapping the finished omelet into a tortilla ********


Ingredients

2 large eggs
Ham, chopped or pre cooked breakfast sausage
Shredded Cheddar Finely chopped onion
Bell pepper, chopped
Mushrooms chopped
Salt & ground black pepper


Directions

  1. Bring a large pot of water to a boil.
  2. Crack two eggs into a quart size resealable freezer bag, then press out as much air as you can and seal the bag shut. Squeeze the eggs to beat them. Re-open the bag and add the ham, cheese, onion, bell pepper, mushrooms and season with salt and pepper.
  3. Carefully place bags in the boiling water, and cook until the mixture is set, about 8 minutes.
  4. Use tongs to remove the bags from the pot. Carefully open each bag and roll out the omelet onto a plate.
