I’ve been experimenting with the paleo diet and I got some “Paleonola” cereal for Christmas. It’s good stuff. Tasty, no grains, just nuts, honey, dried fruit, and coconut oil. But it’s expensive at $9/bag, which equates to about two large bowls. So I read the ingredient list and made up some of my own. The first batch turned out very good, so I thought I’d pass it along:

1 cup sliced almonds
½ cup chopped walnuts
½ cup chopped pecans
½ cup roasted unsalted pumpkin seeds
½ cup roasted sunflower seeds
½ cup grated coconut
3-4 tablespoons of coconut cream
½ to 2/3 cup honey to taste
Raisins, dried cranberries to taste
Cinnamon, allspice to taste; pinch of ginger.

Mix all ingredients and bake in a 300-degree oven for 10 minutes, remove from the pan before it “sets up.” Add dried fruit after baking.
