We used to fill the body cavity with apples slices and onions and roast them similar to a duck or goose. Meat was very tender and reminded me of roast beef.

Yes it can taste different based on there diet. But at the end of the day as long as you get the glands and out and trim off the fat it comes out really tasty. I like to smoke them for a little bit then cook em in the crock pot till the meat falls off the bone.

I can tell you one way not to cook it... Smoking it! Look like a smoked cat. Super tough, but I went through so much effort to smoke it, I struggled through and ate it. ha.

Recently cooked it again via crock pot with a bunch of veggies. After 9 hours the bones pulled right out. Meat was about average tasting. I'll cook it again.

I usually cook them the same way I cook coyotes, sometimes surf and turf with carp.

A boy I work with tried the coon. He said it’s a no go but there aint a groundhog safe around them. He loves to eat them
