Refreezing venison

I want to defrost my venison and grind it all and mix with fat to make burgers and chopped meat.

it’s frozen now. After I defrost and grind can I put it back in the freezer? After I shape into burger and chop meat.

Absolutely. I do it often. You just lose a little moisture each thaw cycle.
This. Specifically, The ice crystals that form bust cells at the microscopic level and pulverize tissue. That pink juice when you thaw meat is mostly myoglobin leaking from the muscle cells that have been ruptured by ice crystal formation. If you freeze and thaw often enough it will change the texture of the meat and most importantly, it will lose some of that myoglobin (juiciness) with every freeze.
