Ok, so moving the vestibule stakes closer to the tent changes the angle and tightens the ridge line between the hiking poles?

The sag in the ridge one was grinding on my nerves a bit. That’s good info for the review

Yep, the door lines should be pretty straight from the pole to the ground. It should look a lot more like this:

Is it possible to pitch this so the edges are closer to the ground for winter protection?

I've been looking at this one but also a mld duomod for better winter camping.

Yes. Tie your stakes close up against the tarp and it pulls the edges of the tarp down low. I have a video ready and I discuss that very thing.
When you shorten your take out ropes, you lose some headroom. If you look at the winter photos above this post you’ll see that guys are closing that gap with snow.

Used the Seek Outside Eolus again on our rafting trip. 2 nights. Easy setup. No problems. The first night we were on a rock/sand bar so we couldn’t use the tent stakes. I ties parachord to the guy lines and wrapped them around rocks like a winter camping set up.
