I recently mixed up a large quantity of snack stix meat using Walton's mix with Sure Gel preservative. I ran out of casings before completed and ended up with about 15 lbs of mixed meat. I decided to freeze this until I could get more casing to finish job. Do I have to worry about thawing out meat and continue to stuff my casings. Prior knowledge or advice appreciated.

Won’t be a problem at all. May need to add a little bit of ice cold water to the meat to help in stuffing it but not necessary if fully thawed. Sometimes passing it through a grinder again before stuffing will help as well.

Thank a lot.. I asked Walton's but but couldn't get a very definitive answer
