I made some antelope pastrami with a couple roasts off the hind quarter of my NM antelope. First time making it. Looked at a handful of recipes and decided to just follow the meateater one. Brined for 6 days in the fridge and then smoked them for a few hours. Turned out better than expected. Makes some really good reubens119195

Next time I will substitute ground mustard for the mustard seed the recipe calls for. It just seems to fall off and make a mess
