OK so i haven't lived up to my moniker so here goes the first post of one of my favorite subjects: mushroom hunting.
We had a heavy couple days of rain last week and I turned up some good ones. Three lobsters, a few young chicken of the woods, and almost 2 lbs of cinnabar chanterelles pictured below! They grow in a lot of leafy duff so it takes a bit to clean them up, lots of running water after brushing with a cheap paint brush.
So what to do with such a haul? Well these cinnabar chanterelles have a distinct peppery flavor that accents dishes so i made an omlette wit a couple eggs, leftover grilled Vidalia slices and a bit of parmesan on top. Great meal and so very rewarding the long hike to find them.
