What’s the best wild game meat?

White tail deer-as this is most of my hunting, Antelope but I am running out, mule deer same situation as the antelope, black bear is O.K. Rabbit is good, A squirrel baked pot pie also, Quail on the B.B.Q. corned goose breast, young spring ground hog with gravy and biscuits also. If I hunt it, I eat it it's all good.

I was expecting oryx to taste nasty given their range (and diet). But I was VERY pleasantly surprised how good that dark red meat tasted! I've since had 3-4 in my freezer and it's probably top-3 as far as meat goes. But Kansas whitetails and NM elk have been "top shelf" over-all for sure.

Now... I have a beaver to try this spring- we'll see!

I wouldn’t call it my #1, but bear is *highly* underrated. It’s probably my 3rd choice after grouse and pheasant.
I agree I love bear meat.

A lot of people love antelope but all of mine goes to summer sausage and pepperoni sticks 😂 I like turkey and grouse just not sure where to rank. All our waterfowl goes to jerky which is good.

Another vote for antelope. If properly cared for in the field, since it is usually on warm days, a pronghorn is tough to beat.

I finally shot an antelope this year outside the rut. It was definitely way better than all the rut bucks I've shot over the years. I get the hide off the rutting bucks and cooled down immediately but for some reason the meat still has the same gamey taste. This year's pre-rut buck was significantly better. I wouldn't go to the extreme of saying it's the best wild game I've eaten but antelope is ok. I haven't had an antelope that eats anything other than sage and shrub-prairie diets and imagine antelope that have alfalfa and other diets may be different?

Native game to Texas:
These 3 are all really close. It depends on the time of the season and how much rainfall that year.
Whitetail
Mule Deer(last 3 I have killed have been excellent)
Pronghorn(only killed one but it was excellent)
Exotics in Texas:
Axis
Gemsbok (really could be 1st depending on the age)
Addax (same, really could be 1st depending on the age)
