Merry Christmas Rokslide. We may not be doing a big Christmas get together, but that has not stopped me from cooking like it. So far We have made elk sausage cheese balls, and elk red chili tamales, still working on the brook trout fish cakes. What are you guys cooking? Frenched whitetail backstrap in our house. First time leaving the ribs on the backstrap. Will definitely do it again on future deer. Doesn't change the flavor at all, but makes for a great presentation.
