^^ This is how it's done. Energy transfer to the animal is the key. I'd keep the terminal energy above 800 ft-lbs to be safe...but the bullet must be designed to reliably expand at the associated terminal velocity.
OP, you're going to have to either chop the barrel or walk around with a 33-ish inch barrel. I'd chop it considering how well the .308 does in a short-barrel configuration. For reference, an 18" barreled .308 will cost you about 150 fps over a 26" with a 168 grain bullet.
