If there is plenty of grazing grass I don't see why there is a need for anything else. If you are working them extra hard a handful of gain goes a long way. Just make sure they have plenty of water.
But then again, I'm not one to bubble wrap my horses.

They are horrible in wind also. You will absolutely need a wind blocker, I use a section of aluminum foil folded up. They work, I'll give you that.
But I prefer my Jetboil, even if it weighs more.

I'm pretty familiar with horses in general but have never used a pack horse. I've ridden many others people's horses and that has convinced me I would never take someone else's horse that I'm not familiar with in the back country.
Get one with the new 6.7 liter twin turbo. We run those in our ambulances and they are beasts! We have had very little issues with them so far, granted our oldest one is a 2012, And they get beat on like a rented mule.
I've never owned one, just tried a few at the store. The ones I tried were pretty roomy, I could put my knees up to my chest and not feel too confined.
If I had the time, I'd love to hike the PCT, but maybe not in the winter though. Summer of 2016 in doing the JMT, it was hard enough to get a month off of work, let along 6 months.
