Bear balogna

Butchering a bear with the intentions of making balogna, how worried are you about removing fat? It seems most say trim every last peice off because it has bad flavor, but others say it's great so don't worryto much about getting everylast piece. What's the RS community say?

I remove as much fat as I can only because I like to render it. Otherwise, I wouldn't worry about it.

I would remove the bigger pieces of fat and leave a little bit in.
