Best wild game meat

Elk/Pronghorn are tied at number 1 for me.

Whitetail/hogs at number 2

Spring bear is awesome

Alligator (especially cheeks & legs) is probably as good as any wild pork I've eaten.

Skwerls/bunnies are ok, but they don't beat dove.

Turkey doesn't do a thing for me, I'm afraid, but a good goose breast is a thing of beauty!
 
There is always variables, but anything I harvest tastes good to me. Occasionally/often tastes great, I treat all animals I harvest with lots of respect. My Montana mule deer buck(harvested on 11/4/18) was very good, top 2 deer ever for me taste wise. Obviously the backstraps and loins were good but the steaks from the hams were very good as well. A corn/bean/sorgum fed whitetail is also very good in my book.
I've eaten idaho black bear, spike elk and maine moose that were great eating as well. Prepared many of ways/cuts which is the true test for a good eating animal.
Then pelagic's that i've caught/prepped/prepared in order 1. swordfish=Broiled/grilled
2. big eye= grilled/raw
3. bluefin= raw
4. yellowfin= grilled
5. wahoo=grilled
6. Mako=grilled/broiled
All pelagics need to be cared for just like the japanese do. Spiked, bled, gutted, rinsed w/ sea water, cavity packed with ice then placed in a ice/salt/sea water slurry. Cool thread

Favorites in order.
1. yearling elk either sex
2. yearling whitetail either sex
3. fall fat racoon roasted

Didn't really care for bighorn sheep or moose. Pronghorn- can take it or leave it
