Smoke bear shanks and testicles???

Has anyone smoked bear shanks or elk/deer/oryx/pronghorn/bear testicles? We have for my son's bday party this weekend moose, bear, pronghorn, elk, deer, various hearts and various nuts to serve the guests. The bear shank and nuts are new ones.

Fry up various nuts and serve them as an appetizer. You know, for casual snacking. :ROFLMAO:

Deep fried Elk juevo's are quite tasty. have not tried smoking them.
Takes a little time to clean and skin them out. Use a sharp havalon type knife.
Let us know how they turn out if you smoke the Bear nuts.

I haven't nut fried, do I just follow a sheep or bull recipe?
We skin them out [removing the tough membrane 2 layers on Elk not sure on Bear]
Cut into slices, batter with what you like then deep fry in a pot of oil.

I think I have ten total, so I might try one or two smoked. I thoguth about air frying them but need to find a suitable batter since I have celiac's disease. I wonder if I can smoke and then fry like a reverse sear....

That sounds like something to try out!
Smoke them then just try to sear in a pan without batter.

Well, the nuts were really good! Got the membranes off, brined them with brown sugar and salt, smoked at 180 for about an hour, then case iron and clarified butter ghee fried them up after coating in a gluten free panko pre mixed something. They were really good.

Bear tasted as it should, smoked for a bit then braised in root bear and a garlic oil something.
