I use the time and temp from Meateaters whole smoked trout recipe and the brine from Traegers Smoked trout dip recipe.

I think after using Traegers this time I like Meateaters brine better.

Traegers brine is a 2 to 1 salt to sugar recipe
Meateaters is a 1 to 1 salt to sugar recipe.

I used some also and made some of Traegers smoked trout dip. That stuff is rockstar.
