I was in your boat five years ago and ultimately ended up with a Pudelpointer. I couldn't be happier. She's a great upland hunter, she doesn't shed, she has a wonderful personality, plus she is fairly mellow in the house.
My PP started out with a pretty slick coat, however, as she has aged her coat is getting longer. The main issue is her muzzle and her ears. I tried the show and shine with great results!!!

do you guys have any tricks or remedies for keeping cockle burrs and stickers off your longer-haired bird dogs?
If not, would you happen to have any recommendations for removing stickers? My poor dog is almost hairless at the end of the season.

Try the Wallowa river in North east Oregon, About 2.5 hours from Boise. Easy access, lots of fish. Wait for warmer weather. Around the end of February. If you want nicer fresher steelhead book a guided trip on the Oregon coast.
I switched to a thumb release three years ago, I also practice with a hinge to keep me honest. I seem to shoot better with the thumb, but if I screw up I hit way left. If I screwed up with a wrist release it seemed more forgiving.
