Bone marrow mashed potato

Anyone ever replace the fat in mashed potatoes with bone marrow? I have and it’s delicious!

boil potatoes with some garlic in the water. Drain and set aside.
cut the bones of animal in half if you can, or into small 2 or 3” pieces if unable to cut in half lengthwise. Roast bones in the oven at 450 for about 10-15 minutes, it will start bubbling and leaking out of the bones. push or scrape the bone marrow out and add to potatoes. Add salt and pepper to taste and sprinkle fresh cut parsley on top.
pairs well with a moose roast and a nice red wine

if you don’t want potatoes it also spreads really well on garlic cheese toast 👍
