Favorite Bear Recipe

What’s everyone’s favorite bear delicacy? I know there are some chefs in this mix.

If you're not already aware, google "pepper stout beef" and make it with a chunk of bear roast. Last time I made it I added about 25% beef chuck roast. It's damn good and I'll be making Pepper Stout Bear every time I get a bear in the freezer!

That recipe looks pretty good. Definitely be trying it.

Shockingly, at least to me, my wife's favorite game meat dinner was bear osso bucco. I have to admit it was damn good. Especially from a cut I see discarded or ground up for dog food in bear camp. I didn't bother with cutting the forearms in discs as prescribed as there's plenty of connective tissue to render during the braise. Your favorite standard recipe will do. Over egg noodles, a real surprise!
I'll also be looking up that pepper stout recipe.
