Full size knife?

I usually carry a folding Gerber with a gut hook that my wife gave me 20 years ago, great knife,but my son just gave me a Gough hand made that looks like it will do any job I need it for.

Depends what you mean by full size. If you mean full handled fixed blade, then always.
I'll often take two: my Fallkniven A1, not for game but for making things - especially fire (it's a knife that happily pretends to be an axe if needed).
For animals, I have my Bark River Gunny Hunter. 108876
Between those two there's not much that can't be done.
 
Carothers field knife in delta 3v. I absolutely love this knife. Only used it in deer so far but between the wife and I this year we have 2 elk, 2 deer, and an antelope tag that we are hoping to test it on. It is phenomenal for field craft work like wood prep.

Bark river classic skinner for elk and a pro scalpel for detail work. Still the two are 6oz.

+++ on falkniven A1, truly a remarkable 6” survival/camp knife, best chopper in that size. I so wished I bought the A2 before exchange rate got crazy.

Hey! We have the same knife! Color and everything.
 
Might take one of the knives I made elk hunting this year. Skinned a few deer with them. Think it’d be cool to skin an elk with one.

If you wanna carry a full sized knife, then go for it. The weight isn't that big 'a deal and most of us are carrying 20 pounds or more of extra weight on our bods so the whole "weight" thing isn't as much of a thing till you decide it is. I find that, on a hunt, the knife rarely gets used till it's time to skin, open a package or spread peanut butter and just about any knife will do for all that. Scouting trips where I may just toss on a day pack and wander for a few days, a knife gets used more for quick and dirty shelters and other stuff.
