How serious are the weight ratings on these? The 634 is recommended in nearly every tripod thread, but I’m hesitant due to the ~7# weight limit. Would throwing a 10# rifle on top really be detrimental?

Not very serious, as far as I can tell. I've shot a lot of rounds from heavy, light recoiling rifles and light, hard recoiling rifles on UL tripods and it works well. It's more of an ideal stability rating than a weight capacity.
